Eat Shoots and Sprouts

Sprouts are nutritious and easy to grow at home, or in a mobile environment like camper van or a boat.

The list of nutrients, vitamins, anti-oxidants in sprouts is endless. They are a good low-fat and low-cholesterol source of protein and they are rich in fibre, vitamin C, iron and folate. There are all sorts of sprouts, from broccoli and radish to alfalfa, beans like mung beans or soybean, and grains like wheat.

Sprouts are just germinated seeds. The seeds are grown in a moist environment, in the dark first and then exposed to light, and eaten when the first little leaves appear on the newly germinated plant. It usually takes a couple of days. They can be eaten in salads, sandwiches, stir-fries, or added to fresh juices. All you need is a jar with water and a dark cupboard to put it in. Sprouting rule number one is to rinse the seeds a few of times a day to prevent rotting.
